Vegetable Mix for Winter
Thanks to the kindness of the same Mrs. Margareta from Gornesti who helped us with the ciolomada recipe, today I can offer you the recipe for salted vegetable mix for winter. It is good to use during winter for soups, stews, and braises, being careful not to add more salt to these dishes, as the vegetable mix contains quite a lot.
Ingredients
1kg parsley root with leaves
1/2kg parsley leaves
1kg carrots
1/2kg kohlrabi
1/2kg cauliflower
1/2kg celery root with leaves
1kg red bell peppers
1kg onion
1 cabbage
coarse salt (amount determined during preparation)
How to prepare vegetable mix for winter
- Chop all vegetables in a meat grinder or food processor. Weigh the result and add 200g salt for each kg.
- Let everything sit until the next day, then put into well-washed and dried jars, trying to pack as much vegetable pulp as possible into each jar. Seal them tightly. Store in a cool place.
