Recipe: Vegetable Stew with Cheese

A rustic, very affordable vegetable stew. As a tip for reducing costs, I recommend choosing extra-ripe tomatoes, the softer ones sold at reduced prices in the market because they're no longer good for salads. But for stew, they're perfect. 😉

Ingredients

200g Danish White cheese (or feta, telemea)
5 green and/or yellow bell peppers
3 green hot peppers
1 very small eggplant
2 large onions
4 well-ripened tomatoes, larger ones
1 teaspoon oregano (or Provençal herbs)
2 tablespoons oil
3 tablespoons extra virgin olive oil
salt, pepper

How to prepare vegetable stew with cheese

  1. Place 3 bell peppers on a baking tray, along with the hot peppers and eggplant slices sprinkled with salt and drizzled with a little oil. Bake at 220°C for 20 minutes. Halfway through the baking time, flip the eggplants and drizzle with a bit more oil on top so they don't dry out.
  2. Meanwhile, bring a pot of water to boil and when it boils, add the tomatoes scored with an X and let them blanch for about 10 seconds. Remove them with a slotted spoon, then peel off the skin.
  3. Cut the two remaining peppers lengthwise, remove the stems, then slice them thinly crosswise. Also slice the onion.
  4. Sauté the peppers in 2 tablespoons of oil for a few minutes. Then add the onion, sprinkle with a little salt and sauté until the vegetables soften.
  5. Add the tomatoes blended in a food processor, add salt and pepper to taste and oregano. Simmer the stew for 15 minutes over medium heat.
  6. Meanwhile, make a slit in each roasted pepper, remove the stem and seeds through it. Fill the peppers with cheese.
  7. When the stew has reduced, add the olive oil, stir, then place the eggplant slices, hot peppers and stuffed peppers in the sauce. Drizzle the stuffed peppers with sauce. Cover the pot and let everything simmer together for another 10 minutes over low heat.
  8. On each plate, place some vegetable stew, and on top a hot pepper and a stuffed one. Serve warm with rustic bread.
