Wild Garlic Pesto

What you can use it for: toss it with pasta, mix it with butter and spread over boiled new potatoes, mix it with cheese or Serbian kajmak and spread on bread with a few radish slices, add it to salad dressings...
Ingredients
1 bunch wild garlic (100g)
30g pine nuts
50g Parmesan
100ml quality olive oil
1/2 teaspoon anchovy paste (or 2 anchovy fillets; omit for lacto-vegetarian version)
1/4 teaspoon ground black pepper
salt
How to prepare wild garlic pesto
- Blend all ingredients in a blender until they become a paste.
- Store in the refrigerator in a sealed jar.
