A vegan mushroom recipe.
Ingredients
13 large mushrooms
a few sprigs of parsley
a few sprigs of dill
1 clove of garlic
1/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon pepper
a little oil
How to prepare baked stuffed mushrooms
- Wash the mushrooms and dry them with paper towels. Remove the stems.
- Place 10 mushrooms in the baking pan cap-side up and bake at 220°C for 10 minutes. Drain the liquid released by the mushrooms from the pan and turn the mushrooms cap-side down.
* this step prevents the mushrooms from becoming too watery; alternatively, you can add a little breadcrumbs to the filling to absorb the liquid. - Finely chop the stems plus the remaining 3 mushrooms and mix them with the chopped herbs, crushed garlic, and seasonings.
- Fill the mushroom caps in the pan with the mixture above.
- Drizzle the mushrooms with a little oil.
- Bake at 220°C for 15-20 minutes.
- Serve warm with garlic sauce and toasted bread.
