Baked Mushrooms with Cheese

Last night I used simple ingredients for a super quick dinner.
Ingredients
250g button mushrooms
1 onion
1/2 bell pepper
1-2 garlic cloves
100g soft cheese (that melts easily)
4 tablespoons olive oil
1/4 teaspoon oregano (or thyme)
salt, pepper
Servings: 1-2
How to prepare baked mushrooms with cheese
- Sauté the coarsely chopped onion and bell pepper in hot oil until softened.
- Turn the heat to high and add the mushrooms, sliced into thick pieces. Fry while stirring frequently until done (about 5 minutes).
- Remove the pan from heat and add the crushed garlic, oregano, and salt and pepper to taste.
- Cut the cheese (keeping aside a slice to cover the dish) into cubes and add to the mushroom mixture.
- Transfer everything into a small oven-safe dish. Cover with cheese slices and sprinkle with a little oregano on top.
* I used orange cheddar cheese which doesn't melt easily being harder, and the result was slightly rubbery; ideally use a softer cheese that melts easily. - Put everything in the oven under the grill until the cheese is golden brown (about 10 minutes). Serve hot with a slice of fresh rustic bread.
