Baked Trout with Green Peppercorns
This simple recipe can be prepared with other types of fish as well. I usually make cod fillets this way and it is delicious. Green pepper is more aromatic than black and not as spicy.
Ingredients
2 trout (500g each)
100g butter
1 tablespoon green peppercorns
5 tablespoons olive oil
1 tablespoon lemon juice
salt, paprika
flour
How to prepare baked trout with green peppercorns
- Rub the trout with salt and let sit for 30 minutes.
- In a bowl, crush the green peppercorns. Add the melted butter, lemon juice, and oil, mix well. Put the sauce in a baking pan.
- Coat the trout in flour and then roll in the sauce in the pan, making sure they are well covered. Sprinkle a little paprika on top.
- I also added 50 ml water to the pan (if using fish fillets, do not add water). Baked at 190C for 20 minutes, basting a few times with the sauce from the pan. Then baked for 10 more minutes at 240C to get a crispy crust.
* if using fish fillets, reduce the time to 10 minutes at 190C and 10 minutes at 240C
