Recipe: Boiled Bacon with Garlic and Paprika

Just like cracklings spread, it's delicious but best in small amounts. The piece I boiled is enough to satisfy our craving until next year. Ideally, the bacon should have a little meat attached and you should boil it in sauerkraut brine.

Ingredients

1 piece of fresh pork belly/bacon (about 10 x 10 cm)
sauerkraut brine (optional)
6 cloves of garlic
1 teaspoon sweet paprika
1 tablespoon oil
salt
pepper

How to prepare boiled bacon with garlic and paprika

  1. Put the bacon to boil in plenty of water with generous salt (or in sauerkraut brine, in which case don't add salt). It's done when a fork goes in easily. My piece of bacon also had some meat, so it cooked slower, about 1 hour.
  2. Remove the boiled bacon to a colander and let it drain well.
  3. Meanwhile, make the garlic sauce (mujdei). Crush the garlic cloves with a little salt until they become a paste. Slowly add the oil until it becomes creamy. Season with plenty of pepper and paprika and mix well.
  4. Spread a generous layer of garlic sauce on top of the bacon. Refrigerate overnight. Slice thinly and serve with soft, fresh bread.
