Boiled Bacon with Garlic and Paprika

Just like cracklings spread, it's delicious but best in small amounts. The piece I boiled is enough to satisfy our craving until next year. Ideally, the bacon should have a little meat attached and you should boil it in sauerkraut brine.
Ingredients
1 piece of fresh pork belly/bacon (about 10 x 10 cm)
sauerkraut brine (optional)
6 cloves of garlic
1 teaspoon sweet paprika
1 tablespoon oil
salt
pepper
How to prepare boiled bacon with garlic and paprika
- Put the bacon to boil in plenty of water with generous salt (or in sauerkraut brine, in which case don't add salt). It's done when a fork goes in easily. My piece of bacon also had some meat, so it cooked slower, about 1 hour.
- Remove the boiled bacon to a colander and let it drain well.
- Meanwhile, make the garlic sauce (mujdei). Crush the garlic cloves with a little salt until they become a paste. Slowly add the oil until it becomes creamy. Season with plenty of pepper and paprika and mix well.
- Spread a generous layer of garlic sauce on top of the bacon. Refrigerate overnight. Slice thinly and serve with soft, fresh bread.
