Recipe: Romanian Macaroni and Cheese

Nothing simpler, right? Yet this is the dish that ranks first in my list of favorite foods. A plate of macaroni with cheese or an eggplant salad with onion I could never refuse. Keep that in mind in case you invite me to dinner 😉

Ingredients

200g short pasta
150g fresh cottage cheese
200g burduf cheese (or feta as substitute)
2 tablespoons sour cream
50g smoked bacon
pepper

How to prepare romanian macaroni and cheese

  1. Cook the pasta in plenty of boiling salted water.
  2. Cut the bacon into small pieces and fry without oil, first on low heat until it starts to melt, then gradually increase the heat to make it crispy. Drain most of the fat released by the bacon, leaving about 1 tablespoon.
  3. Mix the cheeses with the sour cream and season with pepper.
  4. Drain the pasta, add the bacon bits over the hot pasta and mix well, then add the cheese mixture and stir a little to let the cheese melt.
  5. Serve immediately.
