Cabbage with Ground Meat and Bulgur

A kind of bulgur pilaf where you find here and there small pieces of meat and meaty chunks of cabbage. It's like stuffed cabbage rolls scattered in the pot 😉 A Turkish-inspired recipe, to go well with this week's dessert.
Ingredients
1 small white cabbage (approx. 800g)
250g ground meat (beef)
150-200g bulgur
1 onion
1 heaping tablespoon pepper paste
1/2 teaspoon ground cumin
1/4 teaspoon chili
30ml lemon juice
2 tablespoons oil
salt, black pepper

How to prepare cabbage with ground meat and bulgur
- Cut the cabbage into not too small squares. Sprinkle the cabbage with a little salt and knead it to soften a bit and reduce its volume. Finely chop the onion.
- In hot oil, sauté the onion just until it softens (about 5 minutes). Add the ground meat and sauté, stirring frequently, just until it changes color throughout and is no longer pink. Add the cabbage in 3-4 batches, mixing well after each (it will take about 10 minutes for all the cabbage).
- Make a space in the middle of the cabbage and add the pepper paste, chili, cumin, salt and black pepper there. Sauté the paste for about 2 minutes.
- Add 1 liter of water and the lemon juice and stir to combine everything. Bring to a boil, turn the heat to low and simmer the cabbage covered for 40-45 minutes. Check after this time if it's cooked, and if not, leave it until done.
- Add the bulgur and simmer covered for another 10 minutes. The bulgur will absorb most of the liquid. Taste for salt. Turn off the heat and let it sit for another 10 minutes to let the bulgur swell more. Serve warm, with sour cream.
