How to prepare chicken kebab plate - air fryer recipe
- Cut the chicken breast into thick strips about 2 cm wide, lengthwise, then cut each strip diagonally into bite-sized pieces. Mix with the remaining chicken ingredients and refrigerate until needed. You can let it marinate longer in the fridge.
- Peel the potatoes and cut into sticks like french fries. Mix well with salt to taste, the remaining seasonings, and the oil.
- Preheat the Air Fryer for 3 minutes at 200C. Then add the chicken and cook for 10 minutes at 200C, stirring once after 5 minutes.
- Remove the chicken and add the potatoes instead. Spread them in as even a layer as possible and cook for 20 minutes at 200C, stirring as follows: once after 10 minutes and a second time after another 5 minutes. When the 20 minutes are up, check that they are golden and fully cooked. If not, leave them in for additional 2-minute increments. Do not add too many potatoes to the Air Fryer (3-4 potatoes for a 6L Air Fryer is fine), the cooking time will increase and they will fry unevenly even if you stir frequently.
The chicken and potatoes can be made at the same time if you have a dual-drawer Air Fryer - While the chicken and potatoes are cooking, marinate the onion: slice it thinly and sprinkle with salt. Let it sit for 5 minutes to soften. Add the lemon juice and let it marinate for another 10 minutes. Add the olive oil at the end.
- For the sauce, mix everything in a small cup until you have a creamy sauce that flows easily off a spoon.
- Assemble the kebab on 2 plates as follows: First, place the french fries. Sprinkle the golden chicken pieces on top like a mound. Sprinkle feta and parsley over them. Place the red onion on top, like a tuft. Drizzle a few tablespoons of sauce.
- Serve the kebab warm, with the remaining sauce on the side.
For a fit version of the recipe, use only 1 teaspoon of oil each for the chicken and potatoes; use light feta and 2% Greek yogurt; reduce tahini to 10 g; this will reduce calories by 300 and fat by half
