Recipe: Chicken Shish Kebab

Turkish chicken skewers: tavuk şiş kebab. They were perfect for this pleasant weekend. As Mirela said here on the site yesterday, it seems like we worked a lot, but in reality we spent most of the time in the forest. Here in Cluj it was pleasant, we went out to the forest for the first time this year. When we returned home in the evening, I just prepared a portion of Iranian rice and put the marinated skewers on the grill.

Serving suggestions:

  • with Iranian rice or Turkish rice and yogurt
  • with Turkish bread, garlic mayonnaise and grilled vegetables
  • with whole wheat flatbread, hummus and tabbouleh

Ingredients

700g boneless chicken thighs (skinless)
1 cube of butter
fresh mint leaves

Marinade

1 level tablespoon tomato paste
1 level tablespoon pepper paste
1 sprig of thyme
1 teaspoon Turkish spice blend
1/2 tablespoon dried crushed mint
1/2 teaspoon chili flakes (pul biber)
1/4 teaspoon freshly ground black pepper
2 tablespoons lemon juice
10-15 tablespoons oil
salt

Yield: 6-7 skewers; 3 servings

How to prepare chicken shish kebab

  1. Cut the thighs into pieces for skewers (about 3-4 pieces per thigh).
  2. Mix all the marinade ingredients, adding just enough oil to make the marinade more liquid and dilute the tomato and pepper pastes.
  3. Place the chicken in the marinade and refrigerate for at least 4 hours, but it can also stay overnight.
  4. Remove the meat pieces from the marinade and thread them onto skewers (I put about 5 pieces per skewer; choose pieces of similar size for each skewer to ensure even cooking). Let the skewers sit at room temperature for 15-30 minutes.
  5. Heat a grill pan on maximum heat for 5 minutes. Turn the heat to medium and then place the skewers in it. The skewers should not be crowded.
  6. Grill the skewers for 3-4 minutes per side (chicken thighs are quite forgiving, they don't dry out quickly, so let them brown nicely).
  7. Transfer the skewers to a platter and immediately rub a cube of butter over them. Cover with aluminum foil while you finish grilling the rest.
  8. Serve the skewers warm, sprinkled with torn mint leaves and optionally drizzled with a little lemon juice.
