Another quick recipe - I'm an expert at these, sometimes I don't have as much time to cook as I'd like.
Ingredients
1 chicken breast, cut into small pieces
200 g peanuts (roasted and salted)
1 tablespoon cognac
2 tablespoons soy sauce
1 heaping teaspoon cornstarch
1/2 cup chicken broth
1 leek, sliced into rings, or green onions
a little oil
half a cup basmati rice
How to prepare chicken with peanuts
- I started by putting the rice on to boil. I cut the meat into small strips. I mixed the broth, cognac, and soy sauce together in a cup. Separately, I dissolved the cornstarch in a little cold water.
- I greased the wok with a little oil and let it heat up well. I added the chicken and stir-fried for 3 minutes until it changed color.
- Add the peanuts over the meat and continue frying for 3 minutes. Stir constantly.
- I added the broth+cognac+soy sauce and cornstarch and let it cook for another 2 minutes until the sauce thickened.
- I turned off the heat and added the leek (or green onions). Stir to combine.
- Serve with plain boiled basmati rice with salt.
