Crostini with Avocado and Sardines

Today we have something good with sardines again! It goes straight into my party collection. The combination is so successful... like guacamole with sardines. Crispy bread, creamy avocado, aromatic sardines tempered by quickly marinated tangy onion and the fresh breeze of lemon zest... What more could you want on a Tuesday?
Ingredients
10 baguette slices
10 small canned sardines (or 5 if large, about 20 grams each)
1 avocado (ripe)
1 small red onion (about 40g)
4 sprigs of parsley
4 tablespoons lemon juice
a little grated lemon zest
a little oil
sea salt

How to prepare crostini with avocado and sardines
- Cut the onion into thin rings and sprinkle with salt. Mix well and let it sit for 10 minutes. Squeeze the juice from the onion (in your fist or using cheesecloth for larger quantities). Add 3 tablespoons of lemon juice over the onion, mix well, and let it macerate for 10 minutes. At the end, add the finely chopped parsley.
- In a wide plate, place the sardines (whole if small or split in half if large; mine were 20g each so I split them in two and removed the bones). Pour the macerated onion over the sardines and add 1 tablespoon of the oil in which the sardines were preserved. Let it sit until you prepare the toasts.
- Drizzle the baguette slices with a little oil on both sides. Grill on a grill pan until they get light grill marks and become slightly crispy. Remove to a plate and let them cool.
- Just before preparing the toasts, scoop out the avocado flesh and mash with a fork. Drizzle with 1 tablespoon of lemon juice to prevent oxidation and add a little salt.
- Assembly: spread each toasted baguette slice with a generous teaspoon of avocado paste; place a piece of sardine on top, making sure to include some onion slices; sprinkle with a little sea salt and grate some lemon zest. Serve immediately.
