Ingredients
1 small eggplant
2 tomatoes
3 tablespoons parmesan
1 tablespoon chopped oregano (or basil)
salt, pepper
garlic powder
3 tablespoons olive oil
How to prepare eggplant fan
- Score the eggplant lengthwise starting from the tip toward the stem, without cutting all the way through, to create a fan shape.
- Blend the oil with oregano and garlic powder in a blender to make a paste.
- Salt the eggplant slices on both sides, then brush them with the oregano-infused oil.
- Then sprinkle parmesan on each slice. You can also use another type of cheese, like mozzarella.
- Then insert 2 tomato slices between each eggplant slice.
- Brush the outside of the eggplant with the remaining oil.
- Place in a baking dish. Bake in the oven for 45 minutes at 200C.
