Recipe: Flatbread Buns

Thanks to their flattened shape, they're ideal for sandwiches or burgers. So, today for lunch, burgers! Off to start the grill 😋

I shouldn't forget their origin - these are Croatian-Serbian buns called lepinje. I know them from Croatia, where they're served with burgers or alongside ćevapčići (similar to Romanian mici). Here's a video of lepinje being prepared outdoors over embers.

Ingredients

450 g all-purpose flour
1 packet dry yeast (7 g)
260 ml warm water
2 tablespoons olive oil + a little for brushing the buns
1 level tablespoon sugar
1 heaping teaspoon salt

Yield: 6 buns

How to prepare flatbread buns

  1. Put the dough ingredients in the bread machine and set it to the kneading and rising program.
    If you don't have a bread machine, dissolve the yeast and sugar in water. Add to the rest of the ingredients and knead by hand until the dough is elastic and doesn't stick to your hands. Let it rise for at least 1 hour in a covered bowl placed in a warm spot.
  2. Cut the well-risen dough into 6 equal pieces (first cut the dough into 3, then each piece into 2 - this way they'll be more even). Each bun will weigh about 100 g.
  3. Shape each piece into a bun as follows: take the dough in your hand and pull the edges underneath until the top of the dough is perfectly rounded. Place the bun with the rounded side up on a piece of parchment paper dusted with a little flour. Put a plastic bag over it and press down firmly with a wooden rolling pin to flatten the bun.
  4. Brush the resulting discs with a little oil and place them on the baking sheet where you'll bake them (line the pan with parchment paper). Cover the buns with a plastic bag and let them rise in a warm place for about 1 hour.
  5. Preheat the oven to 220°C and place a pot of water on the bottom rack. Bake the buns for 15 minutes.
    * To get a golden crust: since the baking time is short, the buns come out pale, so turn on the broiler and leave them under the broiler for 1-2 minutes until they brown slightly on top; don't leave the oven unattended during this time so they don't burn.
