Quick tapas: shrimp in a super delicious garlic sauce.
Ingredients
15 medium shrimp
5 cloves garlic
1/4 bunch parsley
1/4 teaspoon smoked paprika (pimentón de la Vera; or sweet paprika)
1 bay leaf
10 grinds of chili (or to taste, as spicy as you like)
1 tablespoon dry white wine
1 tablespoon lemon juice
good quality olive oil (5-6 tablespoons)
salt, ground black pepper

How to prepare garlic shrimp
- Clean the shrimp by removing the head and shell, but leave the tail for a nicer presentation. Rinse quickly and then dry very thoroughly with paper towels. Keep between paper towels until ready to use.
- In a mortar, crush the garlic with a little coarse salt until it becomes a smooth paste. Slowly add, stirring constantly, 2 tablespoons of olive oil. Add the paprika, 2 tablespoons of water, and very finely chopped parsley. Mix this garlic paste well.
- Put enough oil in a large skillet (one that fits all the shrimp in a single layer) to cover the bottom in a thin layer. Add the chili and bay leaf to the oil and heat slowly.
- Sprinkle the shrimp with salt and pepper. From now on, you'll be working over medium heat.
- When the oil in the skillet is very hot, add the shrimp (the oil should sizzle vigorously) and fry for 30 seconds. Flip to the other side and fry for another 30 seconds.
- Add the garlic paste over them, stir quickly, and immediately add the wine and lemon juice. Cook for just 30 more seconds and remove the pan from heat.
- Taste the sauce in the pan and squeeze a little more lemon juice if desired.
- Serve immediately, with fresh bread so you don't miss a single drop of the delicious sauce.
