Red Shrimp Curry

A spicy Thai curry with delicate aromas (especially when compared to an Indian curry). It's ready in 10 minutes. Just in time for the jasmine rice to cook.
To give you an idea of the aroma of this curry, I'll tell you what red curry paste contains: dried hot peppers, garlic, lemongrass, galangal, onion, shrimp paste, kaffir lime zest, salt, pepper 🤤
Ingredients
500 g peeled shrimp
1 heaping tablespoon red curry paste
1 small onion
120 ml coconut milk
2 kaffir lime leaves (or 1/2 teaspoon grated lime zest)
1 teaspoon fish sauce
2 tablespoons oil
Servings: 3-4
How to prepare red shrimp curry
- Sauté the onion in hot oil until soft.
- Add the curry paste and stir until dissolved in the oil. Fry for another minute until you can smell it.
- Add the coconut milk, 50 ml water, and lime leaves torn into pieces. Bring to a boil.
- Add the shrimp and cook for 1-2 minutes (depending on the size of shrimp used), until the shrimp turn pink.
- Season with fish sauce.
- Serve with boiled rice.
