Recipe: Goat Cheese and Apple Tarts

Individual tarts so good and lovely, as if they were made in a pastry shop in Paris. And the aromas, oh, they combine soooo well! As usual, I'm delighted by simple things that give me the feeling of perfection. I think I'm a collector - not only in the kitchen - of such moments. Maybe I'm naive. But I couldn't live any other way. I wouldn't be satisfied with big joys that come once a year or a month. I prefer small joys that come my way every day. I've noticed that such moments inspire and motivate me the most.

Ingredients

1 puff pastry sheet
2 Golden Delicious apples
1 roll of goat cheese (100 g; fresh, unaged)
1 organic lemon
2 knife tips of ground anise
5 tablespoons honey
40 g butter

How to prepare goat cheese and apple tarts

  1. Thaw the puff pastry ahead of time in the refrigerator. Unroll it and cut out 3 discs of approximately 14 cm diameter (I used a soup bowl to guide the cutting). Don't let the dough sit too long at room temperature. If you cut it too quickly, keep the discs in the refrigerator or even freezer (if it won't be long) until you'll use them.
  2. Mix the goat cheese with 1 tablespoon of honey and zest from 1/2 lemon. If it's not creamy but remains slightly crumbly, add 1 tablespoon of milk or heavy cream and mix again. Now it should be easy to spread.
  3. Peel the apples. Remove the core using a special tool. Cut the apples in half and then slice them, not too thin. Drizzle with a little lemon juice to prevent oxidation.
  4. Preheat the oven to 190°C and also leave the tray in the oven to be hot when you place the tarts. I've noticed that if I put the tarts in a hot tray, the area under the filling bakes better.
  5. In a wide pan, melt the butter. Add the anise and mix well. Add the apple slices and sauté, stirring occasionally, to cook on all sides, until slightly soft (about 3-4 minutes).
  6. Add the honey and zest from 1/2 lemon. Cook the sauce until it looks like a syrup and foams (about 2 minutes). Remove the pan from heat.
  7. Roll the edge of each dough disc inward and press it all around with the tines of a fork (see photo 1).
  8. Add 1/3 of the cheese cream on top of each, being careful to spread the cheese evenly between the raised edges. Place apple slices on top, arranged as nicely as possible. Leave the syrup from the apples in the pan, it will be used later. Place each formed tart on parchment paper.
  9. Carefully put the tarts in the hot tray (with the help of parchment paper they're easy to move) and bake at 190°C for 20-25 minutes, until puffed and pleasantly golden on the edges.
  10. Remove the tarts from the oven and sprinkle a touch of ground anise over the apples. Distribute the reheated syrup from the pan on top. Serve them warm or at room temperature.
