Simple Cherry Tart (Clafoutis)
Simple Recipes French Desserts Fruits
Clafoutis is a French fruit tart recipe (originally made only with cherries) with a batter very similar to crepe batter.
Ingredients
200g flour
3 eggs
120g sugar (I used brown sugar)
a pinch of salt
80g butter
250ml milk
500g cherries
How to prepare simple cherry tart (clafoutis)
- Remove the stems and pits from the cherries. I used a special cherry pitter, but you can do it by hand.
- Mix the flour with sugar and salt. Then incorporate the eggs one at a time. Add the melted butter and mix well.
- Slowly incorporate the milk so the batter doesn't become lumpy. You'll get a batter with a consistency very similar to crepe batter.
- Grease a 30cm diameter tart pan well with butter, then place the cherries over the entire surface. Slowly pour the batter over them.
- Bake at 200C for 30 minutes, until golden brown. Do the toothpick test to make sure it's done: insert a toothpick in the center of the tart, if it comes out clean, it's ready.
