A year ago, I saw a Tatin tart for the first time, but because it was late at night, I didn't have time to prepare the specific pastry, so I made a simple pound cake batter and poured it over the caramelized apples in the pan and baked it... and that's how what I call the quick Tatin tart was born. In winter, I make it with apples, but now in summer I have lots of fruits available, so today it was the plums' turn... and I added a little cinnamon, as it goes well with plums... with apples I use vanilla.
Ingredients
6 plums
3 tablespoons brown sugar
1 tablespoon butter
3 tablespoons white sugar
3 eggs
3 tablespoons flour
3 tablespoons milk
cinnamon
How to prepare upside-down plum tart
- Cut the plums in half and remove the pits (there are more plums in the photo - I was planning to make a larger tart).
- Separate the yolks from the whites. Beat the egg whites until stiff.
- Mix the yolks with white sugar, then add the milk and finally the flour. Add a little cinnamon. Fold in the egg white foam in 3 stages, mixing gently from top to bottom so the foam doesn't deflate too much - otherwise the batter won't be fluffy.
- Place a heat-resistant dish (20 cm diameter) on the stove and add the brown sugar. Stir constantly until the sugar melts, over medium-low heat, caramelizing the sides of the dish too. Add the butter and stir quickly until melted, then turn off the heat.
- Arrange the plums in the dish over the caramel, cut side down. Sprinkle a little cinnamon and then pour the batter over.
- Bake at 180°C for 15 minutes, then increase the temperature to 200°C for another 15 minutes. It's ready when the top is lightly golden. The batter will rise quite a lot in the dish, but when you flip the tart it will return to normal thickness.
- Run a knife along the edge of the tart to loosen it from the dish and flip it onto a platter. There will be excess syrup, because plums are juicier (this doesn't happen with the apple version) - you can drain it from the platter.
