Recipe: Green Lentil Stew

The simplest way to cook green lentils with more than satisfactory results. The few ingredients let the taste of the lentils shine. That is why it is important to use dark green lentils. I cook it often, just like green lentil soup. These two recipes have become favorites when I crave green lentils.

Ingredients

250g dark green lentils (Puy or Eglouvia; or black lentils; or any lentils that do not fall apart when cooked)
1 small onion
1 level tablespoon tomato paste
1 bay leaf
2 tablespoons oil
salt, black pepper

How to prepare green lentil stew

  1. Wash the lentils in several changes of water.
  2. Saute the finely chopped onion in oil just until slightly softened (about 5 minutes). Add the tomato paste and saute for 2 more minutes, until slightly caramelized.
  3. Add the drained lentils and 750ml water. Bring to a boil. Simmer covered over low heat until done (about 30-40 minutes). Towards the end, when the lentils are soft, if you see there is still a lot of water, remove the lid and let it reduce. At the same time add salt and black pepper.
  4. It is good plain or as a side dish for fish, chicken, pork. During fasting, serve with toasted bread drizzled with oil and sprinkled with a little oregano, or with whole wheat flatbread.
