Recipe: Sweet Potato and Red Lentil Soup

I still owed you a recipe using Sonnentor's Sun Kiss seasoning and a promise from last week for a sweet potato recipe. They finally came together and the result is this aromatic and super healthy cream soup. Sweet potatoes are very rich in vitamins and have a low glycemic index, so they're very suitable for diabetic diets (despite the misleading name).

Ingredients

200g red lentils
1 sweet potato
1 onion
1 carrot
2 garlic cloves
2 heaping teaspoons Sonnentor Sun Kiss seasoning
2 tablespoons oil
salt, pepper

How to prepare sweet potato and red lentil soup

  1. Sauté the finely chopped onion and sliced carrot in hot oil until the onion softens. Add the crushed garlic and sauté for another 30 seconds.
  2. Add the lentils, cubed sweet potato and seasoning. Mix well and cover with 4 1/2 cups of water. Bring to a boil, cover and simmer over medium heat for 15 minutes. Check that the potatoes are cooked and add salt to taste.
  3. Remove the pot from heat and blend everything with an immersion blender. Taste for salt.
  4. Serve with yogurt.
