Sweet Potato and Red Lentil Soup

I still owed you a recipe using Sonnentor's Sun Kiss seasoning and a promise from last week for a sweet potato recipe. They finally came together and the result is this aromatic and super healthy cream soup. Sweet potatoes are very rich in vitamins and have a low glycemic index, so they're very suitable for diabetic diets (despite the misleading name).
Ingredients
200g red lentils
1 sweet potato
1 onion
1 carrot
2 garlic cloves
2 heaping teaspoons Sonnentor Sun Kiss seasoning
2 tablespoons oil
salt, pepper
How to prepare sweet potato and red lentil soup
- Sauté the finely chopped onion and sliced carrot in hot oil until the onion softens. Add the crushed garlic and sauté for another 30 seconds.
- Add the lentils, cubed sweet potato and seasoning. Mix well and cover with 4 1/2 cups of water. Bring to a boil, cover and simmer over medium heat for 15 minutes. Check that the potatoes are cooked and add salt to taste.
- Remove the pot from heat and blend everything with an immersion blender. Taste for salt.
- Serve with yogurt.
