I like to prepare grilled meats for lunch. I marinate the meat the evening before, and during my lunch break I rush home and prepare the meal in 10 minutes. I put the steaks on the grill and while they cook, I make a mixed salad or, more recently, use marinated vegetables.
Ingredients
4 pork neck steaks (about 2 cm thick; 160g each)
1/4 lime
Marinade
2 tablespoons adobo seasoning
1 tablespoon sweet paprika
1-2 dried hot peppers (optional)
3 garlic cloves
4 tablespoons oil
50ml water
1 tablespoon vinegar

How to prepare grilled pork neck steaks
- Prepare the marinade: If you opted for a spicy marinade and want to add the hot pepper (with or without seeds), you need to toast it in a dry pan without any oil. Toast it until the skin starts to brown and you see smoke coming from the pan.
- Put the adobo, paprika, and toasted hot pepper in a spice grinder and grind well.
- Add the crushed garlic, oil, water, and vinegar to the spice mixture and stir.
- Put the meat in the marinade, making sure each slice is covered, and let it marinate between 4 hours and 1 day in the refrigerator.
- Heat the grill pan (without any oil) over high heat for 3-5 minutes. It needs to be super hot!
- Place the meat on the grill and cook for 3 minutes on each side.
- Remove to a plate and let it rest for 3 minutes.
- Serve and remember to pour over the juices left by the meat on the plate, mixed with 1 teaspoon of lime juice. As a side dish: a simple mixed salad.
