Recipe: Grilled Pork Chops

How do we prepare grilled pork chops like professionals?

First of all, don't skimp when cutting the pork chops - thick slices will look very professional and won't dry out on the grill. Then use the right marinade that will ensure flavor and juiciness (remember the brine theories?). And finish with a flourish, Jamie Oliver style: a little lemon juice in the meat juices will perfect the look and taste of the pork chops.

Ingredients

4 boneless pork chops (about 125g each; about 2.5 cm thick)
1/4 lemon

Marinade

150 ml water
50 ml soy sauce (salty variety)
50 ml oil
1 heaping tablespoon lemon pepper
2 crushed garlic cloves

How to prepare grilled pork chops

  1. Mix the marinade ingredients. Place the chops in it and let them marinate for about 4 hours.
  2. Remove them from the marinade and pat dry thoroughly with paper towels. Be careful to just blot, so you don't wipe off the pepper.
  3. Heat a grill pan for 3 minutes over maximum heat. If the pan is hot enough, the meat won't stick. Don't oil the pan, as the chops are oiled enough from the marinade.
  4. Place the chops in the pan, let them sizzle for about 10 seconds, then reduce to medium heat. Cook on the first side for about 2 minutes. Flip and cook on the second side for about 3 minutes. Flip again to the first side and cook for another 2 minutes. Remove the pan from heat and let rest for 1 more minute.
  5. Remove the chops from the pan and place on a plate. Let them rest for 2 minutes (mandatory). Lift the chops and you'll see juice has collected underneath. Gently squeeze the lemon over the sauce and count 20 drops. Mix the sauce with the lemon juice using a fork. Pass the chops through this sauce on both sides. They will become glossy.
  6. Serve the pork chops immediately, with the sauce poured over them.
