Obviously everyone knows how to make an omelet, but it's worth seeing what we ate in Rasnov at Casa Rasnoveana 😉 . The special part of this recipe is flipping the omelet in the air, something I've only seen Mrs. Ungureanu do. Unfortunately, I couldn't photograph it because she was far too fast for my camera.
During a weekend getaway, we ended up in Rasnov and were lucky enough to stay at Casa Rasnoveana. It was pure luck, as we knew nothing about any guesthouse there, so we followed the first accommodation signs that caught our eye. I recommend staying there if you're in the area - cleanliness is paramount, the food is excellent, there's no compromise on quality or quantity, the atmosphere is relaxing, and the family dog, Lord, is the sweetest and most well-behaved in the world (I have a phobia of dogs, so if I petted a German mastiff, that's a big deal - he really is gentle). Rasnov Fortress is unforgettable, it was my second visit. I liked it better the first time because there were fewer people and I could wander freely - this time there was a spice fair, it was crowded, but I'm not complaining, I came home with a bag full of rare spices.
Ingredients
3 eggs
2 tablespoons milk
2 thin slices ham (Prague-style)
2 thin slices cheese
1 sprig parsley
salt
How to prepare ham and cheese omelet
- Cut the ham and cheese into small pieces. Chop the parsley.
- Beat the eggs well with milk and salt, then add the ham, cheese, and parsley to the mixture.
- In a wider, heated skillet greased with just a little oil, pour the omelet mixture, shake the pan to spread the omelet evenly, and fry over medium-high heat until you see the edges are set.
- Using a knife, loosen the omelet from one edge of the pan and pull it to the opposite side so that the omelet folds in half. Press with the back of a fork across its entire surface to push out the excess uncooked mixture from inside. Let it fry for another 30 seconds, then flip the omelet, either in the air (if you have the skill), or with a wide spatula. Let it fry on the other side as well. Serve with tomatoes.
