Salmon Frittata

Ingredients

4 eggs
100 g salmon fillet (skinless)
2 teaspoons capers
2-3 sprigs of dill
1 tablespoon oil
salt, black pepper

How to prepare salmon frittata

  1. In a 16 cm diameter pan, heat the oil and set the heat to medium-low. Place the fish pieces in the pan and fry for 1 minute on each side. Remove the salmon to a plate and flake it with a fork. If the fish has released too much fat, you can drain it from the pan. Put the flaked salmon back in the pan.
  2. Immediately pour over it the eggs beaten with a little salt, ground black pepper, finely chopped dill, and capers (drained if they're in vinegar or desalted in cold water if salted; if they're larger you can chop them a bit).
  3. Leave the pan on heat for another minute, until you see the edges set.
  4. Transfer the pan to the oven at 190°C and bake for 10 minutes (check with a knife in the center to make sure it's done).
  5. Serve the frittata warm or at room temperature with steamed broccoli.
