Salmon Frittata

From the salmon trimmings left over from yesterday, I made a frittata this morning.
Ingredients
4 eggs
100 g salmon fillet (skinless)
2 teaspoons capers
2-3 sprigs of dill
1 tablespoon oil
salt, black pepper

How to prepare salmon frittata
- In a 16 cm diameter pan, heat the oil and set the heat to medium-low. Place the fish pieces in the pan and fry for 1 minute on each side. Remove the salmon to a plate and flake it with a fork. If the fish has released too much fat, you can drain it from the pan. Put the flaked salmon back in the pan.
- Immediately pour over it the eggs beaten with a little salt, ground black pepper, finely chopped dill, and capers (drained if they're in vinegar or desalted in cold water if salted; if they're larger you can chop them a bit).
- Leave the pan on heat for another minute, until you see the edges set.
- Transfer the pan to the oven at 190°C and bake for 10 minutes (check with a knife in the center to make sure it's done).
- Serve the frittata warm or at room temperature with steamed broccoli.
