French Omelet with Brie Cheese

Just the two of us and an omelet...
I make this omelet for 2 people in a 30 cm pan. But if you have smaller pans and want individual omelets, you can do it this way:
- in a 25 cm pan, an omelet from 3 eggs
- in a pan under 20 cm, an omelet from 2 eggs
Ingredients
4 eggs
2 tablespoons milk
70g brie cheese
green onions (scallions)
1 tablespoon oil
salt, pepper

How to prepare french omelet with brie cheese
- Beat the eggs with milk and salt to taste.
- Cut the brie cheese into pieces.
- Grease a pan (preferably non-stick) of 30 cm diameter with oil, including the sides. Place over medium heat and warm for 1 minute.
- Pour the eggs into the center of the pan and shake gently so they spread evenly over the entire surface. Leave over medium-low heat until the edges are set.
- At that point, with a wooden spoon, gently pull the edges toward the center and tilt the pan to that side, so that the uncooked egg from the top flows under the omelet. Do this around the entire omelet until only very little uncooked egg remains on top.
* to better understand this step, watch this video starting at 03:10 - Sprinkle the brie cheese on one end of the omelet. Grind black pepper on top.
- Starting from the cheese side, roll the omelet toward the opposite end. If it tears slightly in places, that's no problem, but handle it carefully to minimize tearing.
- Flip the omelet onto a plate with the folded side underneath. This way, the pretty side will be on top. Grind black pepper and sprinkle with chopped green onions.
