Homemade Mititei (Romanian Grilled Meat Rolls)

I had a few fattier pieces of lamb left over when I made lamb stew and I instantly thought of homemade mititei. If the same happens to you or if you're simply far from the country and missing some mititei, this recipe might help.
Ingredients
300 g ground pork
200 g ground lamb
1 small onion, finely chopped (about 30 g)
2 garlic cloves, crushed
1/4 teaspoon pepper
1 teaspoon sweet paprika
1 teaspoon salt
6 grinds of chili flakes
50 ml sparkling water
1 level teaspoon baking soda
How to prepare homemade mititei (romanian grilled meat rolls)
- Knead all ingredients up to the chili. When everything is well combined, add the baking soda and sparkling water and mix again until the water is absorbed into the meat. Refrigerate the mixture for at least 4 hours or overnight.
- Shape the mititei.
- Grill them on a steam grill pan over medium-low heat. Grill for about 15 minutes on one side and then about 10 minutes on the other side. Serve hot, with mustard.
