This is a method for cooking rice so it comes out perfectly fluffy, with each grain separate. It's the ideal side dish for Indian food.
Ingredients
1 cup basmati rice
1 1/4 cups water
1/2 teaspoon salt
2 cloves
1 green cardamom pod
1/2 cm cinnamon stick (or 1 bay leaf)
1/4 teaspoon turmeric
1 teaspoon cumin seeds
1 tablespoon oil
How to prepare indian rice
- Wash the rice in several changes of water until the water runs clear. Cover with cold water and let soak for 30 minutes.
- Bring the water to a boil with the salt, cardamom, cloves, cinnamon, and turmeric. When the water boils, add the well-drained rice. Return to a boil, lower the heat to minimum, cover with a lid, and cook for 5 minutes.
- Remove the lid, place a towel over the pot (you'll see there's no more water on the rice), then replace the lid. Turn off the heat and let the rice steam for 15 minutes. Don't lift the lid during this time!
- After this time, lift the lid and remove the whole spices.
- In a large skillet, heat the oil well and add the cumin seeds. Fry for 1 minute, then add the rice (taste for salt and sprinkle more over it if needed before mixing) and use a spatula to toss the rice with flipping motions (slide the spatula under the rice and turn it over).
- Serve warm or cold.
