Recipe: Loaded Potato Skins

I want to show off this time 😋 look what I made today, I couldn't stop eating!!! 😊 It takes a bit longer to prepare but it's worth every minute. The ingredients aren't fixed, but I'll write exactly what I used so you can get an idea.

You can also make these on the grill!

Ingredients

8 medium potatoes
8 bacon slices
8 teaspoons oil
seasonings (salt, pepper, garlic powder, paprika)
1 tablespoon butter

Topping 1

- Grated cheeses (whatever you like - I used a mix of Emmentaler, Edam and Cheddar pre-shredded, plus Gorgonzola cut into strips since it's too soft to grate; you can substitute gorgonzola with feta or sharp goat cheese)
- a few green onion stalks
- sour cream

Topping 2

- roasted garlic paste
- a tablespoon of sour cream

How to prepare loaded potato skins

  1. Scrub the potatoes with a steel wool sponge or stiff brush. Pierce them all around with a fork. Mix the oil with seasonings to flavor it and rub each potato with a teaspoon of oil. Place in a baking tray (don't use parchment paper underneath!) and bake at 200°C for about 1 hour, until a fork goes in easily.
  2. Next to the potatoes I also put garlic to roast, wrapped in aluminum foil.
  3. While the potatoes were baking I sliced the bacon and fried it without oil until crispy. I removed it onto paper towels to absorb excess grease and then cut it into tiny cubes.
  4. I took the potatoes out of the oven, cut them lengthwise and scooped out the flesh with a spoon. You need to leave very little flesh on the skin, about 2mm.
    *Don't throw away the potato flesh - use it for another dish. I made gnocchi
  5. I placed the skins in the tray in which I first baked them, cut side down for 10 minutes, then flipped them, brushed the inside with melted butter and left them for another 10 minutes. The skins need to become crispy.
    * You can do this step on the grill too, not just in the oven
    ** Another option at this step would be to fry them in oil, but I don't think we need to add calories.
  6. For those with the first topping I did this:
    - sprinkled grated cheese in the skins, you don't need to fill them, just cover the bottom
    - placed a slice of gorgonzola on each
    - sprinkled bacon cubes
  7. For those with the garlic topping:
    - spread the inside with the paste and then sprinkled bacon
  8. Sprinkle with salt and pepper and bake for another 5 min to melt the cheese.
    * You can do this step on the grill too, not just in the oven
  9. I served them with sour cream and green onion sprinkled on top.
