Mangalitza Sausages with Onion, Green Pepper and Spicy Sauce

The spirit of Christmas is still among us with these delicious Mangalitza sausages. They were supposed to be on the Christmas menu, but accompanied by juicy peppers and sweet onion, they became a wonderful Sunday lunch after all.
Ingredients
3-4 boiled or baked potatoes in their skin
1/4 bunch parsley
salt
Sausages with Vegetables
300 g Mangalitza sausages (about 15-16 pieces; you can also use pork or lamb sausages)
1 medium white onion
1 small red onion
1 green bell pepper
1 tablespoon olive oil
salt, black pepper
Spicy Garlic Sauce
8 tablespoons olive oil
1-2 garlic cloves
2 level teaspoons hot chili paste
2 teaspoons tomato paste
1/4 teaspoon ground cumin
salt

How to prepare mangalitza sausages with onion, green pepper and spicy sauce
- Spicy sauce: blend all ingredients in a small food processor or with an immersion blender and then add salt to taste. Add 1 or 2 garlic cloves depending on how garlicky the sausages are. Let the sauce sit until needed.
* this sauce is also used for shawarma; it makes more than necessary for this recipe - Cut the onion into not-too-thin rounds. Cut the pepper into larger squares.
- In a wide pan (about 25-28 cm; you can also use a wok or a shallow pot if it has a lid) with a lid, heat 1 tablespoon of oil. Add the onion and pepper and sauté on high heat, stirring often until the vegetables brown nicely in places (about 4 minutes) but remain crunchy. Transfer the vegetables to a wide bowl.
- In the same pan, add the sausages and 50 ml water. Put the lid on immediately. Let them steam-cook for about 3-4 minutes, during which time the water will evaporate from them. Remove the lid and wait until the water evaporates completely and the sausages start to sizzle in the pan (you can hear when the water has completely evaporated, the sound changes to sizzling and the oil starts to splatter from the pan). Let them brown on one side (check them often) and then flip them and let them brown on the other side too. If the oil splatters too much from the pan, you can put the lid back on. This step takes about 10 minutes.
- Transfer the sausages over the vegetables (leave the fat in the pan), add 2 teaspoons of spicy sauce and mix gently.
- Transfer everything to the serving platter. Break the boiled potatoes alongside, peel them and sprinkle with coarse salt. Drizzle another 2-3 teaspoons of spicy sauce over the sausages. Sprinkle the chopped parsley over the potatoes.
