Recipe: Grilled Sausages with Cheese and Vegetables

Today everything is on the grill.

The recipe is inspired by my favorite Austrian sausages: Käsekrainer (sausages stuffed with meat and cheese cubes). Made on the grill they brown beautifully and when you cut them the melted cheese gushes out. What could be more wonderful than that? Perhaps just the fact that I found a way to imitate them at home. I chose ham sausages, they're the closest to the Austrian ones. I cut them in half, grilled them until nicely browned on both sides and covered them with grated cheese that melted instantly. Different presentation but the same taste 😉 In the cold season they can be served with potato salad, but now I grilled baguettes and vegetables.

Ingredients

2 ham sausages (about 100g each)
50g cheese (that melts easily)
2 mini baguettes
2 bell peppers or kapia peppers (1 red, 1 green)
1 medium red onion
2 semi-hot Bulgarian peppers
2 medium tomatoes
salt, black pepper, oregano
a little chopped parsley
oil (for brushing)

How to prepare grilled sausages with cheese and vegetables

  1. Peel the onion and cut into rounds. Cut the tomato into rounds. Cut the peppers into large pieces. Leave the Bulgarian peppers whole.
  2. Cut the sausages in half lengthwise, but not all the way through. Open them in two (see photo 1). Cut the baguettes in half lengthwise.
  3. Heat a grill pan well, at least 5 minutes over high heat. Turn heat to medium.
  4. Brush the baguettes with oil on the cut side and place on the grill, about 2 minutes, until they have nice grill marks.
  5. Brush the onion slices with a little oil on both sides and place on the grill, about 3 minutes per side, until they smell sweet. Remove to a plate, sprinkle with salt.
  6. Brush the pepper slices with oil and place on the grill, about 6-7 minutes per side. Use a grill press or a brick wrapped in aluminum foil to press the peppers in the first few minutes of cooking. This way they'll flatten and cook more evenly. Remove the peppers to a plate and sprinkle with salt.
  7. Cook the hot peppers about 4 minutes per side, until browned. Remove to a plate.
  8. Place the tomato rounds on the grill and cook about 1.5 minutes per side. Remove to a plate and sprinkle with salt.
  9. Place the sausages on the grill, cut side down. Cook about 4 minutes on the first side, then flip and cook another 4 minutes on the other side, until nicely browned and crispy.
  10. Sprinkle grated cheese over the hot sausages and wait for it to melt. Sprinkle a little pepper and oregano over the cheese.
  11. Serve everything sprinkled with a little chopped parsley and a cold beer.
