Mini Doughnuts
Christmas Recipes Dough Lacto-Ovo Vegetarian Recipes Desserts
An improvisation from a piece of leftover sweet bread dough. The shaping method is simple and fun, frying is quick, and the taste is "very Christmas"... of course, I dusted them with gingerbread spice.
Ingredients
Dough
200g all-purpose flour
50g sugar
1/4 teaspoon salt
1/2 packet dry yeast (8g)
1 packet vanilla sugar (bourbon, I used Dr Oetker)
1 egg (at room temperature)
30g melted butter
40ml milk (lukewarm)
30ml water (lukewarm)
Gingerbread Spice
2 tablespoons ground cinnamon
1 tablespoon ground ginger
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground cloves
3/4 teaspoon ground nutmeg
powdered sugar
oil (for frying)
How to prepare mini doughnuts
- Spice: mix all the ingredients and store in a small jar. You won't need all of it for this recipe.
* the spice can also be used for apple cakes, walnut pastries, pumpkin pie, cookies, latte royal, etc. - Mix the flour with the sugar and salt.
- Beat the egg and mix with the milk, water, and melted butter.
- In a bread machine, put the egg mixture and sprinkle the dry yeast and vanilla sugar on top. Place the flour mixture on top. Set the machine to the kneading and rising program.
* the dough can also be kneaded by hand, then left to rise in a warm place for 1 hour. - Place the risen dough on a floured surface and knead lightly. Tear off pieces of dough and roll them into thick ropes about 2cm in diameter. Cut the ropes into pieces about 1.5cm long.
- Let the pieces rise for 30 minutes, covered with a bag.
- Heat plenty of oil well in a deep pan. Turn the heat to low under the pan. Fry the doughnuts in oil until golden (move them around with a spatula so they brown evenly, as they tend to float on one side). The doughnuts are small and therefore brown very quickly, so stay alert.
- Remove the doughnuts to a bowl lined with paper towels to absorb excess fat.
- Finally, dust the doughnuts with powdered sugar mixed with spice (2 tablespoons powdered sugar + 1 level teaspoon spice).
