Recipe: Monkey Bread with Cinnamon and Walnuts

I didn't even expect it to turn out so well, although I'd been thinking about it for a few weeks. The dough balls are fluffy and syrupy in the middle, while on top a cinnamon-scented caramel crust forms... absolutely delicious... we even woke up at night to eat another "monkey"... so much for the diet 😋 I just lost 1 kg and I'll probably put it back on soon.

The name of this cake is "Monkey Bread." It's not a fancy dessert - you can prepare it for family gatherings.

Ingredients

Dough

240 ml warm milk
50 g sugar
1/2 packet dry yeast
2 tablespoons melted butter
350 g flour
a pinch of salt

200 g sugar
1 teaspoon cinnamon (or more, to taste)
100 g melted butter
100 g toasted walnuts

How to prepare monkey bread with cinnamon and walnuts

  1. Knead a dough from the first ingredients. The dough will be slightly softer, that's okay. Let the dough rise for 1 hour.
    You can use a bread machine for kneading and rising - just add the ingredients in the order listed and set it to knead and rise (my program takes 1 hour and 10 minutes).
  2. Mix the sugar with cinnamon.
  3. Melt the 100 g of butter.
  4. Grease a heatproof dish with melted butter and then line it with the cinnamon sugar.
  5. Tear off pieces of dough and shape them into balls with your hands dusted in flour (the dough is slightly softer so the balls come out fluffy). Don't press them too hard when forming so the air doesn't come out of the dough.
  6. Dip the balls in melted butter, then in the cinnamon sugar and place them in the dish... continue until you finish all the dough, placing the balls in layers in the dish (I got 2 layers).
  7. Sprinkle walnuts between the balls, as many as you want.
    * Another option would be to grind the walnuts and mix them with the sugar and cinnamon, then dip the balls in this mixture.
  8. Put the dish in a plastic bag and let the cake rise in a warm place for 30 minutes.
  9. Drizzle the cake with 2 tablespoons of melted butter (whatever is left from coating). Bake at 220°C for 30-35 minutes.
  10. When done, flip the cake onto a platter. Eat it with your hands, pulling the balls off the cake. They're better warm. They go very well with a glass of cold milk.
