I've started the holiday cooking marathon. Last night I prepared this roll because it keeps very well, so it can be made several days in advance. I've already put a turkey in brine, I'll roast it on Saturday, and tonight I'm making cookies and croissants. Tomorrow I'll make goulash and a few more appetizers.
You can of course prepare it with other fillings, and I'd be delighted to hear your ideas.
Ingredients
400g fresh mozzarella (in one piece)
3-4 tablespoons Genovese pesto
4 slices prosciutto/ham
How to prepare mozzarella roll
- Bring a large pot of water to a boil. When the water boils, turn off the heat and place the mozzarella in the water. Cover the pot with a lid. Let it sit for 20 minutes until the cheese softens.
- Spread plastic wrap on your work surface. Remove the mozzarella from the water and place it on the wrap. Use a rolling pin to roll it out into a thin sheet.
- Spread a thin layer of pesto on the sheet.
- Lay the prosciutto slices over the pesto.
- Roll up the sheet starting from the longest side.
- Wrap the roll in plastic wrap, tie at the ends and refrigerate until the next day.
