Recipe: Oven-Baked Butter Basmati Rice

Perfect rice, cooked start to finish in the oven. Meaning you put it directly in a heat-resistant dish, pour boiling water over it, add some salt and butter, put it in the oven, and in half an hour it's done. The result? Perfectly cooked rice with a delicious buttery flavor. I found this method in Simple, Ottolenghi's latest book, though I modified the idea here and there to get the rice exactly how I like it. With his amount of water (400 ml to 200 g rice), my grains came out a bit too watery and "bloomed." I tested it several times, playing with the temperature because I thought that was the problem. But in the end, I found the solution by reducing the amount of liquid. He, once the rice is done, garnishes it with a few spoonfuls of olive and walnut salad and some crumbled feta. I haven't tried the combination yet, but simply with butter, it's perfect. And this method is especially recommended when you want to cook rice for a larger number of people, as it's easy to scale up.

200 g basmati rice
25 g butter
250 ml water
1/2 teaspoon salt

How to prepare oven-baked butter basmati rice

  1. Wash the rice in several changes of water until the water runs clear.
  2. Place the rice in a heat-resistant dish (I used a round Pyrex dish; if you multiply the recipe, use a wider dish). Add the butter cut into pieces. At this point, you can also add other whole aromatics if you want to infuse the rice (for example, cardamom, cumin seeds, mint leaves, thyme, or rosemary, etc.).
  3. Bring the water to a boil with the salt added. Pour the boiling water over the rice.
  4. Cover the dish with a lid or foil.
  5. Bake at 250°C for 15 minutes. Turn off the oven but leave the dish inside, without removing the foil, for another 15 minutes.
  6. Remove the foil, gently fluff with a fork, and serve immediately. You can add chopped herbs if desired (mint, dill, thyme, green onion).
