Oven-Roasted Pork Chops

These pork chops are very convenient to prepare when you don't have much time, as they're ready in 30 minutes. Served with mashed potatoes or polenta to absorb the pan sauce, it's a comforting and delicious meal. You can prepare lamb chops the same way, just replace the bay leaf and thyme with 2 anchovy fillets in the sauce 😉
Ingredients
5 pork chops, 1 cm thick (can be boneless, bone-in, or bone-in with rind)
1 head of garlic
150ml chicken stock
100ml dry white wine
1 bay leaf
1 sprig dried thyme
2 tablespoons oil
salt, black pepper, sweet paprika
How to prepare oven-roasted pork chops
- Preheat the oven to 220°C. Place a baking pan that fits the meat slices in a single layer in the oven to heat (I used a 20 cm x 24 cm pan).
- Separate the garlic cloves from the head and remove the outer layers, but leave the skins on. Lightly crush them with the flat side of a knife blade, just enough to flatten slightly. Season the meat slices with salt, ground black pepper, and paprika on both sides.
- Heat the oil in a large skillet and fry the garlic cloves for 1 minute until nicely browned on all sides. Remove from the skillet. Add the meat to the skillet and brown on both sides (about 2 minutes per side). Remove the meat from the skillet.
- Add the wine to the skillet along with the bay leaf and thyme, and boil over high heat for about 2-3 minutes. Add the chicken stock and cook until reduced by half (about 3-5 minutes).
- Arrange the browned meat in the preheated pan from the oven. Scatter the garlic among the chops, then pour the wine sauce from the skillet over them.
- Roast in the oven for 15 minutes.
