Even Carbonara is jealous of this pasta. You only need 5 main ingredients, simple and cheap. They are lower in calories and yet have a sophisticated taste because of the nettles that bring a bit of earthy aroma similar to that given by forest mushrooms or truffles. I can't wait for you to try them.
Ingredients
200 g long pasta (tagliatelle or spaghetti)
200 g Greek yogurt
100 g nettles (young)
2 garlic cloves
2 tablespoons oil
salt, black pepper
Servings: 2
How to prepare pasta with yogurt and nettles
- Tear the nettle leaves off the stems (wear gloves). Wash well in several cold waters.
- Bring salted water to a boil. When boiling, add the nettles. Cook covered for about 5 minutes. Taste them, they should be cooked. Remove with a slotted spoon into a strainer. Press them with the back of the spoon to squeeze out the water.
- In the remaining water, cook the pasta according to the time indicated on the package.
- Chop the nettles with a knife.
- In a wide pan, add the oil and sliced garlic. Sauté on low heat for 1 minute, until the garlic releases a pleasant smell. Add the chopped nettles and sauté together for another 2 minutes, stirring occasionally.
- Remove the pan from heat and add the yogurt and another 2-3 tablespoons of the hot water in which the pasta is cooking. Mix well, seasoning the sauce with salt and black pepper.
- Add the drained pasta and mix again, tasting for salt.
- Serve warm with freshly ground black pepper.
