Pasta with Spicy Tomato Sauce and Herbs

The pasta before running. This weekend I resumed running through the forest... man, it was so hard! All winter I ran in the park, on flat ground, and returning to uneven terrain was brutal. I totally lost my shape. Nevertheless, I beat my record, I managed to run 11 km, after last summer I ran a maximum of 8 in Faget. I think this spicy and aromatic pasta with a shower of herbs gave me the energy I needed to finish the trail. From now on it can only get better.
Ingredients
200 g long pasta (tagliatelle, fettuccine or pappardelle)
2 heaping tablespoons grated parmesan
1/4 bunch parsley
2 sprigs basil
2 sprigs mint
Tomato sauce
1 can tomatoes (400 g)
4 garlic cloves
1 heaping teaspoon hot pepper ground in oil
1/2 tablespoon butter
1 pinch sugar (optional)
3 tablespoons oil
salt, black pepper
Servings: 2 (large)
How to prepare pasta with spicy tomato sauce and herbs
- Break up the tomatoes with a fork or blend briefly in a food processor, just to chop them up a bit.
- In a wider pot, heat the oil a bit and then add the crushed garlic and hot pepper. Stir and leave on low heat until it starts to smell pleasant.
- Add the tomatoes, salt and freshly ground black pepper. Bring to a boil, reduce heat to low and simmer for 10 minutes, stirring occasionally, just until the sauce reduces a bit. Halfway through, taste the sauce and if it's a bit acidic, add a little sugar.
- Add the butter and stir until melted. If the sauce is ready before the pasta is cooked, turn off the heat under the sauce.
- Cook the pasta in plenty of salted water according to package instructions. Drain. Add over the sauce (if it has cooled in the meantime, bring it back to a boil).
- Add the parmesan and chopped herbs and with two spoons mix until the pasta is coated with sauce (about 1 minute).
- Serve immediately.
