Pork in Mustard Sauce

If you want a quick dinner, this is a suitable recipe. Since the meat is cut very thin it cooks quickly, and the sauce is tasty, especially served with pasta.
Ingredients
350g pork tenderloin (or leg)
2 tablespoons flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sweet paprika
a little butter for frying
Mustard sauce
1 onion
50ml vodka (or dry white wine)
150ml sour cream
1 heaping tablespoon mustard
salt, pepper
Servings: 3-4
How to prepare pork in mustard sauce
- Cut the meat into thin slices. Place the slices one at a time in a bag and pound them thin as for schnitzel.
- Dredge the slices through the flour mixed with salt, pepper and paprika. Shake them well to remove excess flour.
- Heat 1 tablespoon butter in a pan and fry the meat slices on both sides, about 3 minutes per side.
* if all the slices don't fit in the pan at once, fry them in batches, adding a little butter before each batch. - Remove the fried meat to a plate.
- In the pan, sauté the chopped onion until soft, then deglaze with vodka (or wine). Let it reduce a bit.
- Add the sour cream and season the sauce with salt and pepper. After 1 minute add the mustard, mix well and add 1/2 glass of water. Bring to a boil and place the meat in the sauce. Simmer on low heat for 5 minutes on each side. If the sauce seems to be thickening too much during this time, add a little water.
- Serve the meat and sauce alongside a pasta side dish.
