Recipe: Roast Pork with Garlic Sauce

The simplest and tastiest pork roast I have tried, based on a recipe that Anca shared with me some time ago. When it is in season, some fresh thyme would go well too, otherwise I have nothing but praise. It only took me 5 minutes to prepare the roasting pan and then I was hovering around the oven, because the smell coming from it was very tempting.

Ingredients

700 g pork (leg)
200 ml tomato sauce
1 head of garlic
20-30 ml oil
1 level teaspoon pepper
1 level teaspoon paprika
1/2 teaspoon salt
a little chili (optional)

How to prepare roast pork with garlic sauce

  1. Cut the meat into thick slices about a finger width and pound them slightly on both sides. Score each slice around the edges, about two fingers apart, to prevent the slices from curling during baking - this way they will stay flat.
  2. Arrange the meat in a single layer in an oven-safe pan.
  3. Peel the garlic cloves and press them through a garlic press, then rub them with a little salt. Gradually add the oil, as if making mayonnaise, rubbing constantly until you get a paste.
  4. Add the tomato sauce and seasonings to the garlic. Also add about 100 ml water - the sauce should cover the meat. Pour this sauce over the meat.
  5. Cover the pan with aluminum foil. Bake the pork roast at 220C for 1 hour.
  6. Remove the foil and if you think there is too much sauce left or you want it thicker, leave the roast in the oven without foil for about 10 more minutes.
  7. Serve the pork roast with mashed potatoes and fermented vegetables.
