Pork Curry

This recipe is a combination of a recipe from a cookbook and one found online. Serve with rice.
Ingredients
500 g pork cut into long thin slices
3 small carrots cut into matchsticks (I used a vegetable peeler for a nicer result)
1/2 red pepper + 1/2 green pepper cut lengthwise
3 potatoes cut into cubes (approx. 300 g)
2 tablespoons soy sauce
400 ml vegetable broth
1 tablespoon curry powder
salt, chilli
Servings: 3
How to prepare pork curry
- Fry the pork in a wide pan (wok) with 4 tablespoons of oil until it changes color.
- Add the vegetables and fry for about 10 more minutes until the peppers and carrots soften slightly. Stir frequently.
- Then add the seasonings (curry, chilli, and soy sauce), mix well and fry for about 1 minute. Only adjust salt at the end since both the broth and soy sauce are salty!!!
- Pour in the warm vegetable broth and let it simmer covered until the meat and potatoes are cooked (about 25 minutes on high heat).
- If too much sauce remains, you can let it cook for a few more minutes uncovered.
