Recipe: Pork Curry

This recipe is a combination of a recipe from a cookbook and one found online. Serve with rice.

Ingredients

500 g pork cut into long thin slices
3 small carrots cut into matchsticks (I used a vegetable peeler for a nicer result)
1/2 red pepper + 1/2 green pepper cut lengthwise
3 potatoes cut into cubes (approx. 300 g)
2 tablespoons soy sauce
400 ml vegetable broth
1 tablespoon curry powder
salt, chilli

Servings: 3

How to prepare pork curry

  1. Fry the pork in a wide pan (wok) with 4 tablespoons of oil until it changes color.
  2. Add the vegetables and fry for about 10 more minutes until the peppers and carrots soften slightly. Stir frequently.
  3. Then add the seasonings (curry, chilli, and soy sauce), mix well and fry for about 1 minute. Only adjust salt at the end since both the broth and soy sauce are salty!!!
  4. Pour in the warm vegetable broth and let it simmer covered until the meat and potatoes are cooked (about 25 minutes on high heat).
  5. If too much sauce remains, you can let it cook for a few more minutes uncovered.
