Potato Flatbreads with Roasted Pepper and Tuna Sauce

We really like potato pies with garlic sauce. A few days ago I made a version without frying. Since pitas on the grill are a bit drier than dough fried in oil, I "paired" them with a versatile pepper and tuna sauce. If you make the sauce a bit thinner (add a little more water) you can use it as a salad dressing.
Ingredients
Potato Flatbreads
1 portion dough for grilled pita
4 medium potatoes
2 tablespoons capers in vinegar
2-3 tablespoons olive oil
salt, black pepper
Roasted Pepper Sauce with Tuna
100g roasted red pepper
50g canned tuna
1 garlic clove
2 tablespoons lemon juice
1/2 tablespoon vinegar (can be from the capers; or sherry vinegar)
2-3 tablespoons water
salt, black pepper

How to prepare potato flatbreads with roasted pepper and tuna sauce
- Prepare the dough for pitas as in this recipe (steps 1-3).
- While the dough rises, peel and cut the potatoes into cubes. Then boil them in salted water until fully cooked. Drain well and then mash with a fork, adding the oil, salt and black pepper as you go. When you have a rustic mash, add the chopped capers. If you want, you can also add finely chopped parsley or dill. Mix well.
- For the sauce, blend everything in a blender until you have a smooth puree. If you want it more fluid, just gradually add one tablespoon of water at a time.
- Divide the dough into 5 pieces. Roll out into thin sheets (more elongated or round, as you wish and as they fit in your pan). Spread a layer of potato mash on half. Cover with the other half and press on the edges to seal.
- Cook the flatbreads one at a time, in a grill pan heated on high heat for 5 minutes (without fat); cook until they have nice grill marks (about 2-3 minutes per side).
- Remove and keep covered until you finish cooking all of them or until serving.
- Serve the flatbreads (they're good warm or at room temperature) with pepper sauce and a green salad (it doesn't necessarily need dressing, the pepper sauce serves as dressing). Some red onion also goes well alongside.
