Red Latte
Delicious caffeine-free latte. You can drink it in the evening too - you'll actually sleep better because rooibos tea (red tea) is good for insomnia 😉
I confess that plain rooibos tea isn't really my thing - I find it too sweet. But you already know my belief that when you don't like something, it's just because you haven't cooked it or haven't found a combination to your taste. Well, for rooibos tea I've already found two combinations where its sweetness is an advantage: this South African-style latte and mulled apple juice.
Ingredients
50 ml water
2 teaspoons vanilla rooibos tea
200 ml milk (almond or any other unsweetened milk)
cinnamon
honey (optional)

How to prepare red latte
- In a small pot, bring the water to a boil. Remove from heat, add the tea, and let it steep for 5 minutes. Strain, pressing on the tea leaves to extract as much liquid as possible. The concentrated tea can be made ahead and stored in the refrigerator.
- Froth the milk (you can use a milk frother pitcher or French press; or a mini milk frother; or blend the milk in a blender at high speed until foamy; or use the steam wand on an espresso machine).
- Pour the frothed milk into a cup/glass. Pour the tea through the foam. Sprinkle with cinnamon. I think it's perfect like this, but if you want it sweeter, add a little honey. Serve immediately.
