Recipe: Simple Pound Cake

I didn't have much time to cook this week, but there's always time for a simple pound cake. I've had this recipe for a few years from Malvi from Germany, who has such simple recipes on hand to make small sweet treats for the family.

The texture of this pound cake reminds me of store-bought cake. Because the crumb seems dense, without being sticky or heavy... with store-bought cakes I've often wondered what leaveners, stabilizers, colorants and other E-numbers they used to achieve that texture, which also lasts for days on the shelf without drying out... that's also the case with this cake... but fortunately, using only natural ingredients, ingredients whose names we can pronounce 😉

Ingredients

4 eggs
200g sugar
1 packet vanilla sugar
220g flour
1/2 packet baking powder
200ml heavy whipping cream
3 heaping teaspoons cocoa powder
2 tablespoons rum

How to prepare simple pound cake

  1. Beat the eggs and sugar with a mixer for 2 minutes.
  2. Add the flour and baking powder and mix gently with a whisk.
  3. Beat the cream until it holds on the whisk. Incorporate the whipped cream into the batter in 3 batches, mixing gently with the whisk so it doesn't deflate.
  4. Grease a loaf pan (25 cm long and 10 cm wide) with oil or butter and coat with flour. Pour half of the cake batter into the pan. Tap the pan on the table to settle the batter.
  5. Incorporate the cocoa and rum into the remaining batter.
  6. Pour the cocoa batter in the center of the plain one. Run a knife through the batter and then tap the pan on the table to settle it well.
  7. Bake the cake at 160°C for 50 minutes.
