A rustic mash where you can still feel the potato chunks and tangy capers that give it a distinctive taste. Served cold, either as a dip or as a side dish. And it's vegan!
Ingredients
4 regular potatoes
2 tablespoons capers
1/2 red onion
2 cloves of garlic
a few sprigs of dill
5-6 tablespoons olive oil
1-2 tablespoons lemon juice
1 teaspoon oregano
2 pinches of pepper
salt
How to prepare spicy mashed potatoes with capers
- Boil the potatoes in their skins. Peel and mash them with a fork.
- Finely chop the capers and dill. Very finely chop the onion. Crush the garlic. Add all of these plus salt and pepper to the potatoes and mix well.
- Mix the olive oil with lemon juice (use 2 tablespoons of juice if you generally like tangy foods, otherwise just 1 tablespoon, since the capers are also tangy) and oregano. You'll see it becomes like an emulsion. Add the emulsion to the potatoes and mix until smooth.
- Serve cold, garnished with capers and drizzled with a little olive oil.
