Recipe: Spicy Mashed Potatoes with Capers

A rustic mash where you can still feel the potato chunks and tangy capers that give it a distinctive taste. Served cold, either as a dip or as a side dish. And it's vegan!

Ingredients

4 regular potatoes
2 tablespoons capers
1/2 red onion
2 cloves of garlic
a few sprigs of dill
5-6 tablespoons olive oil
1-2 tablespoons lemon juice
1 teaspoon oregano
2 pinches of pepper
salt

How to prepare spicy mashed potatoes with capers

  1. Boil the potatoes in their skins. Peel and mash them with a fork.
  2. Finely chop the capers and dill. Very finely chop the onion. Crush the garlic. Add all of these plus salt and pepper to the potatoes and mix well.
  3. Mix the olive oil with lemon juice (use 2 tablespoons of juice if you generally like tangy foods, otherwise just 1 tablespoon, since the capers are also tangy) and oregano. You'll see it becomes like an emulsion. Add the emulsion to the potatoes and mix until smooth.
  4. Serve cold, garnished with capers and drizzled with a little olive oil.
