Recipe: Spicy Miso Paste for Ramen

A complex paste, ideal for a spicy and creamy ramen, but also great with tuna, eggs, meat or stir-fried noodles.

Ingredients

130g white miso
130g red miso
80g doubanjiang paste (or 50g fermented soybeans in chili oil)
15g sesame paste (tahini)
2 tablespoons neutral oil
1 tablespoon toasted sesame oil
35g ginger
6 garlic cloves
1/2 medium onion
50g mirin
1/2 packet granulated dashi

How to prepare spicy miso paste for ramen

  1. Put all ingredients in a food processor or immersion blender and blend until you have a brownish paste.
  2. Transfer the paste to a small saucepan and cook for 5 minutes over medium heat, stirring frequently. You'll see a little oil collecting around the edges when it's ready.
  3. The ramen paste can be prepared a few days in advance and keeps well in the refrigerator.
