Recipe: Spicy Pan-Fried Corn

A Mexican-style corn side dish perfect for grilled meat (especially pork or beef). I prepare it especially in winter when I really miss fresh boiled corn.

Ingredients

1 can corn (340g)
1/2 red hot pepper (or 1/4 teaspoon chili flakes)
1/2 teaspoon sweet paprika
2 sprigs parsley
1 tablespoon oil
salt

Servings: 2-3

How to prepare spicy pan-fried corn

  1. Heat the oil in a wide non-stick pan and add the finely chopped hot pepper. Sauté for 15 seconds.
  2. Add the drained corn from the can. Sauté everything over medium heat, adding salt as you go, for 3-4 minutes. Taste, and if the hot pepper wasn't very spicy and you want a more piquant side dish, add extra chili flakes. Stir occasionally.
  3. Remove the pan from heat and add the paprika. Mix well. Add the chopped parsley at the end.
