Spicy Pan-Fried Corn

A Mexican-style corn side dish perfect for grilled meat (especially pork or beef). I prepare it especially in winter when I really miss fresh boiled corn.
Ingredients
1 can corn (340g)
1/2 red hot pepper (or 1/4 teaspoon chili flakes)
1/2 teaspoon sweet paprika
2 sprigs parsley
1 tablespoon oil
salt
Servings: 2-3
How to prepare spicy pan-fried corn
- Heat the oil in a wide non-stick pan and add the finely chopped hot pepper. Sauté for 15 seconds.
- Add the drained corn from the can. Sauté everything over medium heat, adding salt as you go, for 3-4 minutes. Taste, and if the hot pepper wasn't very spicy and you want a more piquant side dish, add extra chili flakes. Stir occasionally.
- Remove the pan from heat and add the paprika. Mix well. Add the chopped parsley at the end.
