Recipe: Chicken and Corn Salad

I have had this salad since the time I discovered my passion for cooking. It is light, slightly tangy, I recommend it for a light dinner.

Ingredients

1/2 chicken breast
5 heaping tablespoons corn (canned)
3 small gherkins
100g cheese
1 carrot
2 tablespoons olive oil
3 tablespoons lemon juice
salt, pepper

How to prepare chicken and corn salad

  1. Put the chicken breast to boil in hot salted water. Simmer for about 30-40 minutes. Remove and after it cools a bit, shred it into strips.
  2. Add the corn over the meat.
  3. Cut the gherkins into small cubes (like for Olivier salad) and then squeeze out some of the water. Add them over the chicken.
  4. Grate the cheese and carrot on a coarse grater.
  5. Salt and pepper the salad to taste and mix gently. Taste to make sure the salad is well seasoned.
  6. Mix the oil with lemon juice in a small cup and when it becomes like an emulsion, pour it over the salad. Mix again. Check the taste and if you want it tangier, add more lemon juice.
