Strawberry Dumplings

Imagine: ricotta dumplings filled with strawberries, pan-fried in butter, then rolled in poppy seeds. Irresistible! I bet you've already started gathering the ingredients for these strawberry dumplings.
I wish all delicious and impressive desserts were as quick and easy to make as these strawberry dumplings.
Ingredients
200g ricotta cheese
100g flour
3 tablespoons butter
3-4 tablespoons sugar
zest of 1/4 lemon
1 egg
10 strawberries (smaller ones)
1 packet vanilla sugar
50g poppy seeds

How to prepare strawberry dumplings
- Bring water to a boil in a large, wide pot.
- Grind the poppy seeds with 1 tablespoon of sugar.
- Mix the ricotta with 2-3 tablespoons of sugar, 1 tablespoon butter and lemon zest.
- Add the egg and mix until smooth. Add the flour and mix well again.
- Remove the stems from the strawberries, wash and drain on paper towels. Sprinkle with vanilla sugar.
- Take a spoonful of dough and form it into a ball. Flatten the ball in your palm into a disc shape. Place a strawberry in the center, then close the dough around it and roll between your palms to form a ball.
- Place the formed dumplings into the boiling water (reduced to low heat so it's no longer bubbling). Boil for just over 5 minutes, until they float to the surface.
- Heat the remaining butter in a pan. Remove the dumplings from the water with a slotted spoon, drain well and place in the butter. Fry in butter for 2 minutes, turning on all sides.
- Roll the dumplings in the ground poppy seeds.
- Arrange the strawberry dumplings on a platter and sprinkle a little powdered sugar on top. Fresh strawberries can be placed between them for a wonderful color contrast.
